My favourite easy to make dessert recipe is this Banana chocolate chips muffins. I have found many recipes online for banana muffins but I wasn’t quite satisfy. First of all I didn’t want use any eggs and all recipes were using eggs. Thankfully I found great egg substitutes and one of them is banana. Then, too much sugar which is not quite healthy. So I experimented, cut out eggs, lower sugar amount and finally I developed my own recipe which tastes great.
One of the reasons I adore it and make quite often is quick to prepare. It will take only 10 minutes to prepare all ingredients and another 25-30 minutes to bake.
Banana Chocolate Chip Muffins Recipe
You will need:
1 1/2 cup all-purpose flour
2 tablespoons cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2-3 ripe bananas
1/3 cup sugar
1/3 melted unsalted butter or substitute for butter
1 cup chocolate chips
Preheat oven on 350 F (175 Celsius). Combine bananas, sugar and melted butter. In another bowl combine flour, baking powder, baking soda, salt and cocoa. Fold first mixture in to flour mixture and mix until smooth. Then add chocolate chips and fill muffin cups by 3/4.
Bake for 25-30 minutes.
This recipe is for 12 muffins.
Another great thing with this recipe you can’t miss it. Sometimes when I don’t have much time I skip measuring butter and still they are great.
If you put little less butter they will be dry but still tasty and they will go great with cup of coffee. If you put little more butter, they will be more moisture. If I don’t have enough butter I will add vegetable oil instead.
Recently I run out of baking powder so I found out replacement for it too. Baking soda and vinegar can be good substitute for baking powder. As I already use baking soda in this recipe I just add one tablespoon of white vinegar. Result? Still great!
So use this recipe as you think you’ll like the most. It is really easy to make even for beginners.
